Blueberry Banana Protein Muffins

Need a breakfast or snack idea?!  These Blueberry Banana Protein muffins are amazing.  They are fluffy, sweet, low in sugar, have added protein, and are a great "healthier" alternative to regular muffins - without sacrificing flavor or taste!  And they are kid approved!!!

INGREDIENTS

  • 2 ripe bananas (smashed)
  • 1 egg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 2 T coconut oil (melted)
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 scoops Propello Life Vegan Protein Spiced Vanilla (BUY NOW)
  • Splash of coconut or almond milk
  • 1 cup fresh blueberries

INSTRUCTIONS

Preheat oven to 350 degrees.

First mash the bananas, and then add the egg, applesauce, maple syrup and melted coconut oil.  Stir together until combined. 

Then add the flour, baking soda, salt, and Propello Life Spiced Vanilla Vegan protein powder (you can sub with our Whey too!).  Mix everything together, adding in coconut or almond milk as needed to loosen the batter up.

Fold in the blueberries.

Fill muffin tins about 3/4 of the way full (you can use muffin cups or spray with coconut oil spray to make sure they don't stick).  Bake for 15-17 minutes and then enjoy!!!

Makes 18 muffins
