Do you need a healthy, tasty snack? Our Dark Chocolate Protein Buckeye Bites are a great option compared to reaching for a sugary snack or dessert. With dark chocolate, peanut butter, oats, a bit of honey, and whey protein you are sure to love these as much as we do. And the macros are better than a Kind bar!
- 1 ½ c. old fashioned oats
- ½ c. peanut butter
- 2 scoops Propello Life Vanilla Bean Protein Powder
- 3 T. honey
- 1 t. vanilla
- Splash of coconut milk
- 1 bag dark chocolate chip
- 1 t. coconut oil
In a food processor or blender, blend all ingredients (except chocolate and coconut oil) until it sticks together. Roll into ¾ inch balls and place on parchment paper. While rolling the balls, create a double boiler to melt the chocolate (place a small pot with water on the stove, with a glass bowl on top). As the chocolate starts to melt, stir. Once completely melted, use a toothpick to dip the ball mostly into the chocolate leaving a small area uncovered to resemble our beloved buckeye nut. Place back on parchment paper to harden. You can also place the Buckeye Bites in the refrigerator to harden quicker.
