Banana Spinach Protein Muffins

These muffins are kid approved, and such an easy way to get your kids to eat spinach!!!  Our Vegan Protein bakes very well and makes baked good light and fluffy, unlike most high protein baked goods.  Give these a try and they will surely be a favorite!


  • 1/2 c. unsweetened applesauce
  • 1 large egg
  • 2 t. vanilla extract
  • 2 c. fresh spinach
  • 1 ripe banana
  • 1/3 c. maple syrup
  • 2 T. coconut oil (melted)
  • 1 1/2 c. flour
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 1/2 scoops Propello Life Spiced Vanilla Vegan Protein Powder
  • Splash coconut milk


  1. Preheat over to 350 degrees
  2. Mix dry ingredients in a bowl
  3. Blend wet ingredients, including spinach
  4. Pour wet ingredients into dry and mix (add more coconut milk if mixture isn't wet enough)
  5. Fill muffin cups 2/3 way full and bake for 15-17 minutes (until toothpick comes out clean)
  6. Serve to whole family and enjoy! Kids love them!
