Dark Chocolate Chip Oatmeal Protein Cookies

Sometimes you just need a cookie!  We don’t usually do much sugar, but this recipe doesn’t use as much sugar as a normal cookie, it’s gluten-free, is SO tasty, and uses our grass-fed Whey Protein!  Because life is all about balance, right?!?



Preheat oven to 350°.  Put 1 c. oats in food processor and blend.  Add the other oats, protein powder, salt, and baking soda and combine slightly.  In a mixing bowl, combine butter and sugar, add vanilla and egg and mix until smooth.  Add dry ingredients and then dark chocolate chips.  Use a cookie scoop to put dough on parchment paper and press down slightly, then bake for 10-11 min (check to make sure they aren’t getting too brown).  

Makes about 20 cookies.
