The Perfect Mint Chocolate Chip Protein Bar

What's better than chocolate? Chocolate and mint!!!

This bar tastes a bit like those beloved Thin Mint Girl Scout cookies, without all the guilt. These bars are simple, quick, and delicious!

Preparation time: 10 minutes

Servings: 10 bars

INGREDIENTS

  • 1 1/2 c. almond flour
  • 2 scoops Propello Life Vegan Protein Dirty Chocolate
  • 1/2 c. cocoa powder
  • 1/2 c. peanut butter
  • 1/2 tsp sea salt
  • 1/2 c. honey
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1/4 c. mini chocolate chips or dark chocolate chips for topping

DIRECTIONS

  • Line an 8x8" glass pan with parchment paper
  • Mix almond flour, protein powder, cocoa powder and salt in a large bowl
  • In a smaller bowl, mix together peanut butter, honey, peppermint extract and vanilla extract
  • Pour wet ingredients into dry ingredients, and mix.  The best way to mix all of this is with your hands - the best tools in the kitchen!
  • Pour mixture into glass dish, and use your hands to FIRMLY press mixture down
  • Sprinkle on any additional toppings you want, like the chocolate chips!
  • Place in refrigerator for 30 min.
  • Take out of fridge, cut into two rows of five, or ten squares and enjoy!!!
