It's day 7 of the new year, and if you are like most people, you are on day 7 of eating healthy/detoxing/avoiding sugar. And you may be getting tired of chicken breast and salads, too!
This delicious dinner will definitely add some SPICE to your healthy eating habits and will keep you on track with your health goals!
Just grab a slow cooker and get ready for a delicious meal that tastes like Chinese take-out without all the MSG, salt and fried food!
But be prepared... this dish is SPICY!!!
INGREDIENTS
-
3 organic chicken breasts
-
1/2 cup sriracha (this makes it pretty spicy - add less if you are looking for a slightly less spicy dish)
-
1/2 cup organic raw honey
-
1/2 cup coconut aminos
-
2 cloves garlic, minced
-
organic rice or cauliflower rice
-
steamed broccoli
-
sesame seeds for topping
DIRECTIONS
-
Place chicken breasts into slow cooker, and set on high for 2-3 hours or low for 6-8 hours.
-
Whisk together the sriracha, honey, coconut aminos and garlic until combined. Pour on top of chicken and put lid on to cook.
-
Towards the end of the cooking time, prepare your rice (or cauliflower rice) and broccoli to your liking. We cooked our rice and steamed our broccoli.
-
At the end of the chicken cooking time, use two forks to shred chicken. If you would like a thicker sauce, this is the time you can take out the extra sauce and put it in a pan with cornstarch or butter/flour to make a rue and make it thicker. This step is not necessary but does thicken the sauce if that is what you prefer.
-
Build your bowl! First put in the rice or cauliflower rice, then top with shredded chicken, steamed broccoli, drizzle some sauce on top and then top with sesame seeds.
-
Enjoy!!!
